Apple & Cheddar Granola Crisp

This isn't your ordinary apple crisp - our friend Kale Suckz paired baked apples with the sharp flavors of cheddar to cut through the sweetness, using our very own cheddar granola as the crumble topping. 

You can certainly make a crisp with our other flavors - think rosemary crumble on top of apples with a drizzle of honey.

 

    Ingredients

     

    for the crumble:

    • 1/2 cup¬†(60 g) AP flour
    • 3/4 cup¬†(85 g)¬†Jamie's Farm¬†Cheddar Granola
    • 1 tbsp¬†brown sugar
    • 1/2 tsp¬†baking powder
    • 1/2 tsp¬†salt
    • 1/3 cup¬†(76 g) unsalted butter, diced and chilled¬†

    for the filling:

    • 3¬†large honey crisp apples- peeled, cored & sliced thin (~865 g¬†post prep)
    • 1/4 cup¬†(57 g) unsalted butter, browned
    • 2 tbsp¬†AP flour
    • 3 tbsp¬†water
    • 1 tbsp¬†lemon juice
    • 1 tsp¬†vanilla extract
    • 1/4 cup¬†(50 g) brown sugar, packed
    • 1 tsp¬†cinnamon
    • 1/4 tsp¬†nutmeg
    • 1/4 tsp¬†salt

    Instructions

    for the crumble:

    1. whisk together flour, granola, brown sugar, baking powder & salt until fully combined. then, add in the diced butter and incorporate with fingers until you have pea sized butter balls. cover with plastic wrap and refrigerate until ready to use.

     

    for the filling:

    1. preheat oven to 350 F (177 C). lightly grease a 9 inch pie plate or an 8√ó8 baking pan with butter and set aside.
    2. in a small saucepan on medium-low heat, brown the butter. this will take about 5-8 minutes. once browned, transfer to a heat proof mixing bowl and set aside to cool slightly.
    3. add the remainder of the filling ingredients (minus the apples) to the brown butter and whisk until fully combined. then, pour this mixture over the prepared apples and stir until evenly coated.
    4. place apple mixture in pie plate or baking dish & top with crumble. *you may want to place the apple crisp on a baking sheet to prevent juices spilling into the bottom of your oven. bake for 35-40 minutes, or until the apples are tender when poked with a toothpick.
    5. serve immediately with ice cream!
