
Chocolate Yogurt Mousse with Granola
We've done it again -- light and fluffy yogurt mousse, that's as simple as 1, 2, 3. This time, we incorporated dark luscious chocolate to make it feel extra indulgent.

Preparation: Place a heatproof bowl over a saucepan of simmering water. Add dark chocolate to bowl and stir until melted. Once melted, allow to cool slightly, then stir with greek yogurt until fully incorporated and smooth. Using a mixer with a whisk attachment, beat the egg whites in a separate bowl until light and fluffy. Heat the honey in a small pot over medium heat until it begins to bubble. Slowly stream the warm honey into the bowl of egg whites while beating continuously until the egg whites form stiff peaks. In a separate bowl, spoon a third of the meringue into the chocolate yogurt mixture to loosen. Gently fold in the rest of the meringue until fully incorporated. You can serve as is, or chill in the fridge to set. Serve in glasses with sour cherry jam and plenty of granola. |
