Pistachio Date Balls with Maple Pecan Granola

Ingredients

  • 1 cup medjool dates, pitted
  • 1/2 cup roasted pistachios
  • 1/4 cup shredded coconut
  • 1 tbsp peanut butter
  • Granola of choice, for rolling (we used the Maple Pecan Granola)

Blend all ingredients together (except for granola) until a sticky dough forms. Set the granola aside in a bowl. Form the dough into balls between your palms, then roll through the granola. Pop the date balls into the fridge to firm up.
